(Phaseolus vulgaris); aka YinYang, Orca; Heirloom; Bush bean; Dual use: snap or dry; Minimum 30 seeds
On our coveted "must grow" list. We absolutely LOVE these beans slow-cooked with molasses and bacon, though sometimes we "cheat" a bit on the slow-cooking end and use the pressure cooker. A reliable and prolific producer, these low maintenance, compact bush beans deserve a place in your garden and are suitable for small spaces. We mainly grow Calypso as a dry bean but we have pickled the sturdy pods for pickled beans that disappear fast after the jars are opened! The dry beans double in size when cooked and keep their firm texture.
Our 2018 Calypso beans are of the fifth generation grown in our Michigan garden.
