A sprawling bush with runners, this bean did exceptionally well in our Michigan garden as a low-maintenance variety, yielding a heavy harvest of short pods housing 5-6 small beans each. Mexican Salmon bean is included in the Roughwood Seed Collection that sourced it as a Nicaraguan heirloom bean typically grown on short corn in Matagalpa. Dry, these flavorful beans are traditional culinary mainstays in Central American cuisine. Vilmorin lists Saumon du Mexique in 1885.
