Wanting to increase our diversity in nutritional greens that won't bolt during the summer is what prompted me to include this versatile Caribbean succulent in our gardens and despite it's tropical origins, it thrives! A relative of purslane, the leaves are spinach-like, packed with omega 3 fatty acids, antioxidants, iron and potassium. In addition to its culinary use, Jewels of Opar is used in herbal medicine.
Jewels of Opar's cheery airy sprays of tiny pink star-shaped blossoms that give way to cute jewel-like seed pods are ornamental in bouquets.
