Guatemalan Green Flesh Ayote Squash

This is a landrace winter squash from Guatemala (Cucurbita moschata). It has dark green flesh with a wonderful rich flavor.They can become very sweet the longer they are in storage. My original seed came from EFN (Experimental Farm Network), and I have been selecting for the earliest maturity and largest fruits for a number of seasons. This is a late maturing squash at 120 days, but it has always produced plenty of mature fruits before the first fall frosts here in Northern Indiana. Ayote Squash can store for about 4 months.

This strain exhibits a lot of diversity in shape, size and interior color (some being very dark green, while others can be light green and even greenish-orange). It is my absolute favorite winter squash for baking.
