Known for its unique, rich, umami flavor akin to that of kombu, the Seaweed bean, a delicate-skinned Japanese dry bean is fantastic in soups and other bean-centric dishes. Acceptable as a snap bean when young, it is more common to wait until its pods are dry and plump with chubby seeds to truly enjoy this distinctive variety. Vines are productive and vigorous, easily reaching 5-6 feet.
