A Semifino (medium grain) brown rice, Vialone has a high starch content which makes it a wonderful risotto variety that absorbs liquids well, keeping its shape during cooking.

Vialone plants tiller heavily and grow tall, developing a purplish hue to its leaves, stalks, and hulls as they mature.

A long season variety, Vialone is harvested roughly 125-130 days after transplanting in early May.

Lodging might occur after periods of heavy rain.

Our original seed stock was sourced from John Sherck who received it from Sylvia Davatz.

IMPORTANT NOTE: Keep in mind, rice seed is hulled. Rice is planted in its hull but after harvest, that hull must be removed before eating. De-hulling rice is not easily achieved by hand, requiring mechanical assistance such as the Brill De-huller or an electric de-huller.
