Yu Xiao's time-honored way of preparing maodou (fresh soybeans / edamame)

We first learned to truly enjoy fresh soybeans when living in China. Our dear friend and chef extraordinaire, Yu Xiao taught us this easy way to prepare them.

  1. Bring a pot of slightly salted water to a roiling boil
  2. Reduce heat and add fresh soybean pods
  3. Boil for four minutes
  4. Immediately rinse the soybeans with cold water / immerse the soybeans in cold water to cool
  5. Squeeze the tender buttery seeds into your mouth and compost the pods
  6. Enjoy!
