We first learned to truly enjoy fresh soybeans when living in China. Our dear friend and chef extraordinaire, Yu Xiao taught us this easy way to prepare them.
- Bring a pot of slightly salted water to a roiling boil
- Reduce heat and add fresh soybean pods
- Boil for four minutes
- Immediately rinse the soybeans with cold water / immerse the soybeans in cold water to cool
- Squeeze the tender buttery seeds into your mouth and compost the pods
