Mung beans are a great way to increase your diversity of plant-based pantry-friendly protein sources. Prolific and low-maintenance, their upright stature allows for close spacing. Mung beans are used like red lentils in Indian and Nepalese cuisine. They are also good sprouted.
Grow mung beans as you would dry beans. If direct seeding, wait until your soil temperature is at least 70°F consistently before sowing. Pods are mature when they are brown-black and dry.
