Developed by North Dakota State University as an alternative for sweet potatoes in northern gardens, its upright plants require about a 3-foot diameter circle of growing space to produce an average of 5 fruits per plant. The 1-3 pound squashes are orange-fleshed with small seed cavities and store well when properly cured. A sweet favorite baked - alone or stuffed.
