We use our Floriani Red Flint Corn to make a fabulous, rich, creamy polenta, though it can be made with any flint corn cultivar.
Use our Traditional Polenta Recipe to make a thick polenta.
Allow polenta to cool before gradually adding flour to create a dough that keeps its shape when formed into patties.
Make patties and fry in hot oil in small batches on both sides until golden brown.
Serve warm - we like to drizzle with homemade sorghum syrup or maple syrup, though polenta cakes are a great complement to slow cooked beans mmmm.... YUM!
